Irish Lace Cookies

My mother used to make these and they were always so good. I recently came across the recipe and thought this would be a great place to store it. :D


1/2 c butter
1 c sugar
1 egg
1 tsp vanilla
2 tbsp flour
1/3 tsp salt
1 c quick cooking oatmeal

Cream butter and sugar. Add egg and vanilla; mix well. add flour, salt and oatmeal. Line cookie sheet with aluminum foil and drop dough by 1/2 teaspoonfuls onto foil. Bake 5 to 8 minutes in 350 degree oven or until lightly brown. Let cool before removing from foil.

I made these for Easter and they were fantastic! I used raspberry jam and then strawberry jam. We took them to 3 different gatherings and everyone raved about them. They will definitely be on the Christmas cookie list this year.


3 sticks butter
1 cup sugar
2 egg yolks
3-3/4 cups plain flour
1 tsp vanilla

Preheat oven to 350 degrees. Cream butter & sugar until creamy. (A little redundant, no?) Add egg yolks and vanilla. Add flour a little at time and mix well. Roll into little balls and punch hole in middle with thumb, fill with 1/4 tsp of marmalade or jam. Bake for 10-14 minutes.
