1 serving olive oil cooking spray (5 one-second sprays per serving)
6 breast uncooked boneless, skinless chicken breast(s)
1 Tbsp butter
4 tsp all-purpose flour
1 cup fat-free evaporated milk
1 Tbsp chives
3/4 cup feta cheese
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken, cook 9 minutes on each side or until done; tent with foil to keep warm.
Melt butter in a saucepan over med-high heat; add flour. Cook 1 minute, stirring constantly with a wire wisk. Gradually add milk, stirring constantly; stir in chopped chives. Reduce heat to med-low; simmer 3 minutes or until thick, stirring ocassionaly. Add cheese; stir until cheese has melted. Spoon over chicken.
Yields 1 chicken breast and 1/4 cup of sauce.
