Santa Fe Black Bean Salad

30 oz canned black beans

15 oz canned yellow corn, no salt added

1/2 cup cilantro

1 1/2 tsp minced garlic

1 tsp table salt

1/2 cup chives

1 medium sweet red pepper(s)

1/4 Tbsp fresh lime juice

2 tsp olive oil



Wash and air dry chives, cilantro and red pepper. Rinse and drain black beans and corn. Remove seeds from red pepper and then chop into small pieces. Take 6 to 8 green onions (chives) and cut into small (1/8 to 1/4 inch)pieces. Mix black beans, corn, red pepper, green onions, minced garlic, lime juice and olive oil into large bowl. Chop cilantro leaves into small pieces and add last. Marinate for at least an hour.
