½ Cup light sour cream
2 Tsp grated lime rind
4 Tbsp lime juice
4 Tsp Splenda
4 Medium apples
2 Cup diced celery
4 lettuce leaves
4 Tablespoon toasted walnut pieces
Instructions: In a small bowl, whisk together the sour cream, lime rind and juice and Splenda. Set aside. Core the apples and cut into 1/2 inch pieces. Add the celery. Mix with the sour cream mixture and divide into 4 servings over the lettuce leaves. Top with roasted walnut pieces.
