This one is supper yummy! My WW friend, Gen, came up with this recipe and it's a big hit at our house. It has a slightly Indian flavor to it. Serve with Broccoli, and Basmati Rice or Couscous.
Servings: 6
Ingredients
1 c plain fat free yogurt
2 tsp olive oil
1 Tb fresh lemon juice
2-3 cloves minced garlic
2 tsp salt
1 Tb chili powder
3/4 tsp ground cumin
3/4 tsp black pepper
1/4 tsp cinnamon
6 skinless boneless chicken breast halves
Instructions
1. Whisk together the yogurt, the olive oil, lemon juice, garlic, salt and spices, then add chicken and turn until coated well.
2. Marinate in the fridge for four hours, or at room temperature for 20 min.
3. Spray pan with cooking spray and fry chicken until just cooked through. (or bake at 375 degrees until done)
